Pinewood Derby and Cheeseburger Chowder Kinda Weekend

We had a wonderful week of fast cars and fun food.

Cheeseburger Chowder

Ingredients
 Crockpot
1lb of ground beef cooked and fat drained
       1 container of Onion and chive cream cheese
6 slices of bacon cooked and crumbled
    1 bag Ore Ida Hasbrowns the square shaped ones. Frozen
1 Velveeta cheese 8oz stick
1 chicken broth stock 32oz.
 small onion diced
Frenches Fried Onions & extra bacon for topping  

Cook ground beef.   Add all the ingredients in the crock pot. The frozen potatoes, diced onion, Velveeta cheese and chicken stock. I placed it on high for about 4 to 5 hours stirring occasionally.
And voila! I topped with fried onions and a little more bacon.

Three Cheese Steak Sandwiches! What's a dinner!!

 Tonight's dinner is an oldie but a goodie in this house.  We are a meat and potato's kinda family and this gets the job done. Oven Baked fries to go along with this dinner. 
Yummy Ice Pops and we are ready to roll.

Three Cheese Steak Sandwiches

Ingredients
3/4 pound frozen sirloin steak, partially thawed (or freeze fresh sirloin for 45 minutes)
1 teaspoon chili powder
1 teaspoon dried oregano
3/4 teaspoon granulated garlic
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons vegetable oil, plus more if needed
1 large or 2 small yellow onions, sliced with the grain
1 red bell pepper, cut into thin strips
8 ounces mushrooms, sliced
3 tablespoons cream cheese
2 teaspoons Worcestershire sauce
2 slices American cheese
4 hoagie rolls
3/4 cup shredded mozzarella cheese, or 4 slices provolone

Directions

Slice the partially frozen meat into very thin slices. Mix together the chili powder, oregano, garlic, salt and pepper in a small bowl. Toss the meat slices in the mixture to coat.

Heat the oil in heavy saute pan (such as cast iron) over medium heat. Cook the onions and peppers until tender, about 5 minutes. Add the mushrooms and cook until all the vegetables are soft and golden, about 5 minutes longer.

Preheat the broiler to high.

Remove the vegetables to a plate and add a splash more oil to the pan. Raise the heat to medium-high. Cook the meat quickly in the hot pan, browning on both sides. Once brown, reduce the heat to low and mix together the vegetables and beef. Add the cream cheese, Worcestershire sauce and American cheese, and stir until creamy and well incorporated. Split open the hoagie rolls and place on a baking sheet. Divide the beef mixture among the rolls and top with the mozzarella cheese. Broil until the cheese begins to bubble, 1 to 2 minutes. Watch carefully for burning. Serve.

PIZZA

Tonight is Pizza Night. The kids love this meal. They get to make and decorate their own pizzas!
Enjoying a quick and easy Tuesday night dinner. Love those easy dishes that don't take to much effort. We are a busy family with many events through out the week that having a quick meal that is fun for everyone it wonderful. 
So here is Pizza Night.

Tonights Dinner

Landon and I made Nana's Chicken for dinner.




 

Nana's Chicken Recipe

4-8 pieces of Boneless Chicken Breast
2 Eggs
1/2 Cup Milk
1 Cup Flower
1 Cup Seasoned Bread Crumbs
1 Cup Panko Bread Crumbs 
Oil for browning chicken
Salt and Pepper
1 large Onion sliced thin

Heat pan with oil.
Mix eggs, milk together, Mix both bread crumbs together. Add salt and pepper to milk and egg mixture, Flower and bread crumb mixture.

Dreg chicken in flower than egg than bread crumbs. Place chicken in pan and brown on both sides.
Place chicken in baking dish.
Cook the onions till translucent. Pour over chicken cover with tin foil bake at 350 for 25 to 30 minutes. Goes well with rice and steamed beans.
